We all have days when we don’t know what to cook for dinner, so last week I had one of those and I threw together what I could easily manage. It turned out delicious!

Here goes:

Peppers

Onions

Garlic 

1 chorizo and a cheese russian thinly sliced

Frozen Vegetables 

Chicken Stock

Spices 

A can of tomato, onion and herb relish 

Cheese 

Cooked Brown Rice 

Parsley (if desired)

Fry up the onion, peppers and garlic until golden brown, then you add the sausages. 

Add the rice, stock and spices and close the lid for about 10minutes. Then add the veggies and the tomato, onion and herb relish. 

Put it in a shallow dish and put cheese over it and some parsley, if desired. Pop it into the oven for about 10 minutes or until the cheese is golden brown.
