For my recent wedding anniversary, I wanted seafood but I am also limited to what I can give my husband due to his shellfish allergies.
I also wanted pasta and I also wanted to spend quality time with my husband and also wanted to enjoy the food!
I had frozen clam meat, and my husband and I enjoy watching Schitt’s Creek, so I used the opportunity as a fun reference to our current favourite show.
The main character’s wife says he “keeps everything inside like a bashful clam”, as does my husband! And so, dinner was “born”, in my mind.
Ingredients:
2 tbsp Garlic, chopped
1 tsp of Butter
3 cups frozen Clams
Half a cube of seafood stock (Knorr Caldo De Marisco)
Salt & Pepper
1 cup Whipquick (plant-based cream)
Cooked Linguine, cooked al dente
1 tsp of dried chillies
A bushel of chopped Parsley
Method:
Melt the butter on low heat. Add in the chopped parsley and sautée for a minute. Add the frozen clams and cook until defrosted. Season to your liking with salt and pepper.
Add the stock, cream and linguine. Stir through, and garnish with chillies and parsley.
Enjoy with a loved one!
