Hayley’s Pasta Alla Puttanesca

My family and I adore this meal. For such a quick meal, the flavours are actually quite sophisticated (but somehow my kids love it!). It is rich, versatile, flavourful, and can be made however you want it, with any pasta you prefer. I like swirling it around and getting as much of the sauce on the pasta as possible, so I enjoy using linguine, tagliatelle or spaghetti. What’s awesome about this dish is that you can use as much (or as little) of any of the ingredients and really make it your own.

I do not recommend this for a date though – too many sharp smells for a prospective beau!

 

Ingredients

1 tablespoon olive oil
2 teaspoons fresh garlic
1 Can of chopped tomatoes
1 Can of tuna
2 teaspoons of chopped anchovies, if desired
Pitted Calamata olives
2 tablespoons baby capers
1 cube of Knorr Caldo De Marisco (Seafood Stock)
Linguine (tagliatelle or spaghettini will also do)
Salt and pepper to taste
Crushed red chili flakes
Chopped fresh basil to taste

 

Method:

Heat the olive oil over low heat and add the garlic. Saute for a minute or two (taking care not to brown the garlic as that makes it bitter).
Pop in the all the other ingredients and reduce slightly.
Crumble in the stock cube or sprinkle the powder into the sauce.
Cook the pasta until al dente.
Toss the pasta with the sauce and serve warm, topped with chopped basil.
