My veggie soup takes you no more than 50 minutes, so I know you can use it for a quick veggie fix when you don’t have much time!

A tablespoon olive oil 

Smoked Pork Bones 

Mixed veg – I usually buy them already cut up, they include potato, carrot, pumpkin, onion, herbs 

Garlic 

Spinach cut finely 

Fine coriander 

Paprika 

Cumin 

Salt and pepper 

A packet of soup of your choice – to thicken the soup and add some flavour 

How to: 

Add oil to the pot and put all the veg in the pot together. 

After about 5minutes, add the bones and water to fill the pot. Add garlic and spices, salt and pepper. Let it simmer for about 35 minutes or until the veggies and pork bones are soft. 

Then mix the soup packet with water until it makes a thick paste and pour into your soup while stirring. Let it boil until all the bubbles that the packet of soup makes are gone. 

And your soup is done! Enjoy!
