This pasta is quick, easy and a definite crowd pleaser! You can have dinner on the table in 20 minutes if you boil the pasta water as you start making the sauce. My only advice is to cook enough of it – you will need to serve seconds! Sub in the ham for bacon or smoked chicken, put some cheese on it and bake it in the oven for a small upgrade!
Ingredients
1 tbsp Butter
1 cloves of Garlic, Crushed
3 cups of chopped Mushrooms
1 cup of sliced Smoked Ham
2tbsp chicken stock powder
Freshly ground Salt & pepper to taste
2 cups of fresh Cream (I use a plant-based cream)
1 handful of chopped fresh parsley
Half a cup of grated parmesan (parmiggiano reggiano, or cheese powder)
Pasta of your choice, cooked al dente – I use linguine
Method
Melt the butter on low heat. Sautee the garlic in the melted butter, and make sure it doesn’t turn brown. Add the mushrooms and sautee. Once the mushrooms are cooked, add the ham, salt, pepper and stock powder and stir through. Stir in the cream, parsley and parmesan, cooking for around 3 minutes until the sauce is thickened. Toss with your pasta, et voila! Enjoy!
